Dr Island Winemaking, where tradition meets innovation in our multi award-winning wines. Our state-of-the-art winemaking facility is the perfect setting for creating exquisite wines that are unrivalled in quality, flavour and complexity. Current wine styles produced include traditional method sparkling, aromatic white wines and barrel matured Chardonnay and Pinot Noir to name a few.

Dr Island Winemaking is conveniently located in Cambridge Tasmania. Ideally suited to servicing vineyards statewide. Specialising in winemaking of the highest quality we are perfectly suited to process small and medium and large batch wines. We are not only equipped with state of the art winemaking equipment but also employ some of the best
winemakers in the industry.

Dr. Island currently processes 400 tonnes of wine grapes. The winery has capacity for 1,000+ tonnes with additional warehousing for packaged wine.

The bottling system has been set up to run with 3 staff at a rate of over 1000 bottles per hour. Contract bottling has seen a steady increase with growing demand from external producers.

The winey also houses a complete laboratory, offices, lunch room and bathrooms.

Current winemaker/directors are more than happy to carry on as is and take on new owner winemaking requirements if any. They are also open to overseeing change of ownership and advise throughout the transition period on machinery and winery layout.

Dr Island is equipped to process batches as small as 1 tonne and as large as 100. Grapes are hand sorted along our custom vibrating sorting table and can be pressed in one of two bag presses. We have capacity to store 80 tonnes of fruit in our commercial cool room and over 200 barrels in our dedicated warm room.

The tank farm can hold 100,000 litres spread over 23 tanks all with digital temperature control. The cooling system is the first in the state to use CoolFit pipe work and runs a Kreyer Quantor Q45R Chiller with a 1000 litre buffer tank and pressure differential control pump. A very robust Senator air compressor with backup and buffer tank is capable of running the 140 hectolitre Bucher Press and bottling line with ease. Fixed air lines are plumbed throughout the building.

The winery is equipped with 4 flexi impeller pumps including a liverani smart pump, float pump as well as 2 centrifugal pumps all quite new and well maintained, ensuring the right pump for the job is available.
23 open stainless steel red fermentors hold over 60 tonnes and are stackable requiring very little room outside of vintage.
Other equipment includes Bucher Flavy FX 3 ICS cross flow, hundreds of tri clover fittings, 2 x 2.5t Cat forklifts and a 5t with rotating head and extended mast.

50KL dual level waste water catchment tank.

Bondor shed is 600m2 divided into two rooms. Both can be heated, one has been fitted with chilling fans to drop the room to 4 degrees Celsius.

Each major building support strut has, hot and cold water hoses, compressed air, 240 and 3 phase power access for multiple production areas to work simultaneously. 

Sub-Lease lab under the offices is currently $2K per month for an independent lab (Winecheck). 

Floor is divided into equal squares - they are 10x10m squares with central drain holes. Each square is also on 2% slope toward central drain hole. An isolated splash down area every 100 m2 for production flexibility.
